Extra. Thick. Cut. We almost feel dirty when we say it. This is the bacon to end all bacons. While most packages of bacon hold anywhere from 16-24 slices in 12 oz., Peter Luger holds a mere 5 pieces. And believe us, it’s not because ol’ Peter is pulling a fast one. Each slice is truly a slab, weighing in at over 2 ounces and nearly a half-inch thick. (Most grocery store varieties are a measly 1/5 inch.) You’ll only need one to satisfy any craving for porky sumptuousness.
Originally, the 130 year-old legendary Brooklyn steakhouse reserved this cut of bacon for their waitstaff alone. But we can’t imagine that anything that tasted this good could possibly be kept a secret for long. By the 1980s, it was an elusive part of a secret menu that only the in-the-know diners would request. Finally, in 1997, the restaurant relented and put it on the menu, not as a burger accompaniment or a salad topping, but as a stand alone a la carte menu item. When we got a taste of this bacon in our tasting room, we felt blessed. (Not even #blessed, just pure hand-to-heaven blessed.) Praise be. The piggiest of bacon connoisseurs will go hog wild.
Tip of the Tongue:
Take a note from the Peter Luger menu, and serve this bacon a la carte perhaps with a tangy barbecue sauce. But be warned. After one bite, there will be no going back to any other bacon.
