When a pickle maker hands over a jar and says it’s their favorite, you know you’re in for a rare treat. That was the case when Kansas City first shared these pickled green tomatoes. But what exactly are green tomatoes? As you might have guessed, they’re under-ripe tomatoes, firm and rather tart, which actually makes them a prime choice for pickling. These guys are treated in a rather minimal brine of white vinegar, water, salt, fennel, garlic, shallot and bay leaf. No sugar, no spices. The fruit provides most of the flavor with bright notes of licorice and mint.

Sub in these juicy, briny fruits wherever you’d typically use pickles. Atop a burger, they’re delightful. Batter and deep fry them and don’t forget some good aioli alongside. Or better yet, use them as a garnish for your saucy Bloody Mary. We’re not gherkin’ around.
